The Prince de Galles Hotel is launching its Riviera-inspired Sunday brunch

This new brunch aims to be an immersive experience in its own right, allowing guests to share and take their time whilst savouring the moment to the rhythm of the Riviera’s eternal summer. The menu, designed to enhance this occasion, celebrates the gentle flavours of the Mediterranean: beef tartare, king crab rolls with mango, pain bagnat or socca evoke the Riviera’s art of living, blending authenticity with refinement.

Oysters, shellfish and smoked salmon round off this culinary journey with its maritime flavours, paired with seasonal vegetables, fresh herbs and meats inspired by the Riviera.
As for the desserts, they too follow this tradition of dishes with Mediterranean touches: a reimagined Tropézienne, a pavlova with fruit and jasmine, a limoncello baba and delicate creations featuring orange blossom or olive oil.
