Le Pur’: A showcase for haute cuisine at the Park Hyatt Paris-Vendôme

Just a stone’s throw from Place Vendôme, the Park Hyatt Paris-Vendôme embodies the contemporary elegance of a Parisian palace. Behind its listed façade, this five-star hotel combines art, design and excellent service for an experience that is as refined as it is prestigious. A perfect example of this delicate attention to detail is the gourmet restaurant PUR’, which has been awarded one Michelin star and four Gault&Millau toques.

Redesigned by architect and artist Hugo Toro, the space reveals an intimate and organic setting, designed as a place for conviviality, connection and transmission. The décor, inspired by nature, envelops visitors in a refined, sophisticated and warm atmosphere, reflecting the style of chef Jean-François Rouquette, who has been working here with passion for nearly twenty years.

His philosophy: clear cuisine that respects the terroir and nature, focused on the authenticity of the ingredients. Each dish reflects a strong identity, guided by seasonality and enhanced by precise cooking, delicate textures and clear flavours. Lobster, turbot, pigeon and chanterelle mushrooms are expressed with sincerity, in an unpretentious composition with sometimes unexpected flavours.

For an even more immersive experience, the Chef’s Table, set up on a podium directly connected to the kitchens, welcomes up to six guests for a dinner that brings them closer to haute cuisine.
